Dehydrated Balsamic Lettuce

- Yield: Makes enough for 4 servings of soup
- 16 baby Bibb, or other baby lettuce leaves
- 1 tablespoon Villa Manodori balsamic vinegar
- 2 teaspoons extra-virgin olive oil
- Celtic sea salt
In a medium bowl, toss to combine lettuce, vinegar, and oil. Season with salt. Arrange lettuce on a nonstick drying sheet. Place in dehydrator set at 105 degrees until wilted but not dried, about 30 minutes.
