Pineapple Salad
Clay Aiken's grandmother shares a recipe for hot pineapple salad.
Preheat oven to 350 degrees. In a medium bowl, combine pineapple, sugar, flour, and cheese. Transfer to an 8-by-8-inch, 1 1/2 quart baking dish. Top with crushed crackers and drizzle with melted butter. Bake for 35 minutes. Let stand 10 minutes before serving.
I have used this recipe since I saw it on the show. It's easy and delicious. I sometimes use crushed pineapple.
This is the best potluck dish as everyone asks for the recipe and it is so easy to make. Delicious and novel! I've taken it to church and made it as Christmas gifts. Great and delicious; men especially like it. Thank you, Martha and Clay Aiken. I've used it on and off for the last two years.
