Preheat oven to 400 degrees. Place 24 toothpicks in a small bowl filled with water; let soak 15 minutes. Line a baking sheet with parchment paper and fit with a wire rack; set aside.
Halve dates lengthwise being careful not to cut all the way through. Place a small amount of cheese in the center of each date. Wrap a piece of bacon around each date. Secure bacon with a toothpick.
Place dates on prepared baking sheet. Bake until bacon is cooked through, 20 to 25 minutes.

I make these for every party I give! They are so popular I often have to buy the biggest box of dates I can find to make enough! I find that using crumbled Gorgonzola is also good, as it is more mild tasting than Stilton.
Took these to a neighborhood party and they were gone in seconds flat! Big hit!
I can't even describe how good these are. You don't even need to put cheese in; they are so delicious. I made these and TWO hardcore vegetarians gave in and ate them, because everyone was sighing with happiness. NOTE: It's definitely smart to soak the toothpicks, however I only did it for 3-4 minutes and it worked out great.
Being a vegetarian, I don't eat these but I've made them several times and each time I hear how much my friends & family love the sweet and salty combination. I will continue to bring them to parties. Thank you!
