Strawberry Pops

Look for locally grown berries that are brightly colored and plump. They should have the green caps attached and be uniform in size. Avoid soft, shriveled, or moldy fruits. If the strawberries smell sweet, they will most likely taste sweet, too.

  • 1 1/2 pints strawberries, rinsed and hulled
  • 1/2 cup confectioners' sugar


  1. Pulse strawberries with sugar and 1/3 cup water in food processor until pureed, with some chunks of berries remaining. Pour half of mixture into a bowl.

  2. Pulse remainder until smooth. Stir puree into mixture in bowl. Pour into 3-ounce molds or plastic cups, insert sticks or wooden spoons, and freeze until solid, at least 8 hours.

    Have this in my freezer right now. My son was happy to help and excited. I was excited for a semi-healthy summer snack. I don't buy popsicles very often from the store often they just have too much junk. I could only find 5 oz little cups so used those instead of the 3oz ones the recipes calls for. The mix filled up 8 cups 1/2-3/4 the way up. Used 1/4 cup sugar as someone else recommended - plenty sweet for 1 lb of berries. Hope it turns out - it should :) Next time going to add in 1 orange. Yum

    I could have sworn that the original recipe in the magazine only had 1/4 cup sugar. That's really all the sugar you need. I'm excited to try other combos of fruit!

    This is a great recipe. It is easy to make and fun for kids. Can't wait to try other kinds of fruit! 1 1/2 pints = 3 cups of fruit.
