Rhubarb Iced Tea

  • Servings: 8
Rhubarb Iced Tea

Ingredients

  • 8 stalks rhubarb, cut into 3-inch lengths
  • 8 cups water
  • 1/3 cup sugar, or to taste
  • Fresh mint sprigs, for garnish

Directions

  1. In a large saucepan, combine rhubarb and 8 cups water; bring to a boil, and simmer for 1 hour. Strain the liquid, add sugar to taste, stirring to dissolve, and allow to cool. Serve over ice with a sprig of mint.

    This is a fabulous recipe and easy. It takes time to cook the rhubarb, but not too long. The thing I love about this tea is the beautiful color. With the ice cubes and a clear glass pitcher, it's just lovely to look at.

    Lovely drink! I ended up added more sugar than it called for, though.

    This is just like the Rhubarb tea I make. I got the recipe from a Shaker Cookbook. I add Lemon or Orange zest to it. Much better!
