Cauliflower Soup with Balsamic Onions and Wilted Lettuce

Cauliflower Soup with Balsamic Onions and Wilted Lettuce



  1. In a high-speed blender, combine cauliflower, oil, vinegar, and water. Season with salt and pepper. Process until smooth and thick. Pass through a medium sieve. Taste and adjust for seasoning.

  2. Divide the soup between 4 bowls. Arrange lettuce and red onion slices around the bowl, and spoon on some of the reserved onion marinating juices. Serve immediately.

    I wasn't too sure about lettuce in my cauliflower soup, but I thought - what the heck - - - right up until I realized that NO where in this recipe does it call for COOKING the cauliflower! I might be a good sport, but raw cauliflower and vinegar soup - with or without lettuce - isn't my idea of a bowl of anything good to eat....
