Whole-Grain Toast with Yogurt and Pistachios

  • 4 tablespoons nonfat Greek yogurt
  • 2 slices whole-grain toast
  • 2 tablespoon honey
  • 2 tablespoon shelled pistachios


  1. Spread nonfat Greek yogurt on whole-grain toast. Drizzle each with honey. Sprinkle each with shelled pistachios. Serve immediately.

    I love this! I substituted spelt bread, and agave nectar for the honey. Spelt is a good alternative, agave nectar is less sweet than honey, has a low glycemic index; and is natural. It is derived from the blue agave plant that is also used for tequila.

    This is light yet really stays with you, and provides energy without the drop sweets do. I also use it as a snack.
