Don't forget the vegetarians on your next picnic. This sandwich piles high crunchy cucumber, carrot, and radish and pairs them with creamy goat cheese, avocado, and sprouts for a sandwich that will please veggie-eaters from the West coast to the East coast.
Sprinkle onion slices with a few dashes red-wine vinegar; let sit 10 minutes. Lightly toast bread. Spread 1 slice with goat cheese and layer with cucumber, alfalfa sprouts, onions, avocado, and grated carrot and radish. Top with other slice bread.
this was so yummy! Each seperate taste together was wonderful, my son even gave it thumbs up and hes a picky eater!

This recipe was awesome! I am always looking for whole food recipes to pin and share and try with my 90/10 nutrition challenge groups (www.tribasetraining.com/nutrition). This fit perfectly and was a big hit. Highly recommended. I did several of Martha's veggie sandwiches one week and all were a hit. This carnivore was surprised and loves veggie sandwiches now.

I made this last year with feta and it was a HUGE HIT! ...even with the carnivores.
