Eyeball Highball

A martini is the ideal medium for spectacular Halloween ice cubes -- and the very definition of an adult treat. Make extra "eyeballs" and lay in flavored seltzer; kids will want to share in this creepy delight.

  • Servings: 4

Ingredients

  • 14 medium radishes
  • 7 pimiento-stuffed olives, halved crosswise
  • 16 ounces gin or vodka
  • 1 ounce vermouth

Directions

  1. Trim stem and root ends of radish. Use a paring knife to scrape red skin from radish, leaving just enough to give a veiny appearance. With a small melon baller, cut a hole in radish, about 1/2 inch in diameter. Fit an olive half, cut-side facing out, into hole. Place radish in ice-cube tray. Repeat with remaining radishes. Fill tray with water; freeze.

  2. Mix vodka or gin with vermouth; stir with ice. Divide eyeball ice cubes among four glasses. Strain martini; pour into glasses, and serve.

Cook's Notes

Look for radishes that are fairly uniform in size, so they will fit nicely into your ice-cube tray.

    These looked terrible- they turned the ice red-purple, they were foggy and hard to see the detail I put into them. I put them out anyway, since it was Halloween, but they weren't appetizing or cute at all. Then I found out they tasted and smelled terrible when melted. I will skip this for sure next year.

    I'd use a lychee instead of the radish and put an olive in it. Would look the same and would probably taste much better..

    Why couldn't you use a miniature version that tasted like it belonged in the martinis......using pearl onions. I would think you could put a caper in the middle of it and freeze.....or use your imagination! ;)

    These look great and aren't that difficult to make, but they make the drinks taste terrible, unfortunately.
