Sweet Pea Sauce

  • Yield: Makes 2 1/2 cups

  • 1 1/2 cups fresh sweet peas, blanched and shucked
  • 3/4 cup homemade or low-sodium canned chicken stock
  • 3 tablespoons heavy cream
  • 1/4 teaspoon coarse salt
  • 1/8 teaspoon freshly ground pepper


  1. Place peas, chicken broth, cream, salt, and pepper in a blender and blend until smooth. In a small saucepan, heat mixture over very low heat until warm, about 2 minutes.
