Huguenot Torte
Viewer Dorothy Mae returns to the show to share her delicious recipe for Huguenot torte. Part 1.
Preheat oven to 325 degrees with racks in the upper and lower thirds of the oven. Spray two rimmed baking sheets (17 1/4-by-11 1/2-by-1 inch) with cooking spray; set aside.
In the bowl of an electric mixer fitted with the paddle attachment, beat eggs on medium speed until pale yellow and thickened, about 4 minutes. Gradually add sugar, and beat until light and fluffy. Sift together flour, baking powder, and salt. With mixer on medium speed, gradually add flour mixture. Beat until incorporated, about 1 minute. Add apples, pecans, and vanilla; beat to combine.
Divide mixture between prepared baking pans, spreading evenly. Bake until golden brown, about 45 minutes. Remove from oven, and let cool 20 minutes. Using a spatula, break into pieces, and stack on a large serving platter. Serve topped with whipped cream and nuts.
On "Martha Bakes," Martha sprayed her baking pans with cooking spray before and after lining them with parchment paper, and she folded the apples and pecans into the egg mixture with a spatula, rather than beating them to combine.
This has become a family favorite. It came out perfectly I have since cut the pecans to 1 cup which my family prefers but give it a go. I saw it on Martha Bakes when she was doing Meringue recipes. Love it!!!!!!! (And as one reviewer said, spray the pans and line with parchment, absolutely a must)
The first time i followed the recipe exactly. Came out way to sweet, like so sweet it hurt to eat it. Also my torte did not look exactly like theirs at any point in the process, but i took the chance and baked it anyway. It could have used less baking time but the already unappetizing color of the finished productwould've been even worse. Second time i added cinnamon and cloves, the flavor was vastly improved, but still had an ugly color. have no idea why.Won't be adding it to my catering menu.
This is very easy to make and very delicious, especially witht the whipped cream. Just be certain to spray or grease your sheet pans VERY well so it doesn't stick to the bottom.
I made this and it came out delicious, even though I made a mistake and added too many apples. Lovely!!!
