Peppermint Bark

Peppermint Bark

Ingredients

  • Nonstick cooking spray
  • 1 pound white chocolate, chopped (do not use chips)
  • 2 cups puffed rice cereal
  • 1 bag (7 1/2 ounces) hard peppermint candies, unwrapped

Directions

  1. Spray a 10-by-15-inch rimmed baking sheet with nonstick cooking spray; line with a piece of waxed paper. Crush candies (see below).

  2. Place white chocolate in a heatproof bowl set over (not in) a saucepan of simmering water. Heat, stirring occasionally, until smooth, 4 to 6 minutes. Remove from heat; stir in rice cereal.

  3. Transfer mixture to prepared pan; with a spatula, spread to edges of pan.

  4. Sprinkle with crushed candy; with a piece of waxed paper covering the entire surface, press in gently (paper prevents hands from sticking to candy and chocolate). Chill until firm, 20 to 30 minutes (no longer, as candy will begin to soften).

  5. Peel waxed paper off. Break bark into 2-inch pieces.

Cook's Note

To crush candies: Place candy in a doubled resealable plastic bag (one inside the other); seal and wrap in a kitchen towel (to prevent candy from piercing the bag). Use a rolling pin or skillet to crush candy into tiny pieces. Pass through a large sieve to separate crushed candy from fine powder. (Save powder to stir into hot chocolate or sprinkle on ice cream.)

    I love this recipe! I make it every holiday season, the cereal adds a wonderful dimension! The other day I found bagged crushed peppermints in the holiday aisle in the grocery store..you can imagine my excitement!!!

    I made this for a cookie swap, and everyone loved it... at my house, I mean, before I left for the party. It was almost gone! Super easy to make and it looks pretty in a nice package! I'll be filing this one in the "keeper" box!

    Yummy. Fun to make. Fun to give as a gift. So easy and pretty. Makes a wonderful hostess gift. So much better than your average store bought peppermint bark. I didn't realize that I like peppermint bark but I do now!

    This recipe is super easy and fast to make--love the crispy rice addition! We modified it slightly and created a layer of bittersweet chocolate before adding the white chocolate to the pan. We also used ignored the warning and substituted high-quality (Ghirardelli) white and bittersweet chocolate chips--they melted perfectly and tasted delicious!

    I like this recipe even better than others I've found that don't include the rice cereal. I make it in both white and dark semi-sweet chocolate.

    This is also one of my family's favorites for the holidays. Really easy. The crisped rice lightens up the heavy bark nicely. Make sure to use really good white chocolate!

    I add a milk chocolate bottom and add the cereal to that, (Like a Nestle crunch bar). While that is cooling in the fridge, I melt the white chocolate and add a 1/2 tsp of peppermint extract. Then I spread the white chocolate onto the cooled milk chocolate bottom and then sprinkle the candy pieces in the top. I have friends and family begging for it every year!

Using a rolling pin or skillet, crush candies into tiny pieces. Sift to separate crushed candy from fine powder, reserving fine powder for another use; set crushed candy aside.

    Is there a special way to crush the peppermints? The recipe says "see note below" but there is no note that I can see!

    I recently tried this for the first time and won a holiday baking contest at work! A couple of edits: I chopped up my white chocolate and melted in the microwave. I added about a TBSP of sweetened condensed milk to the chocolate. (Watch carefully and stir often!). I mixed the peppermint powder in with the chocolate and rice cereal, with the crushed candy on top. Plus, I stored the bark in the fridge up until serving. While it did soften a bit, I think that the candy tasted better while cold!

    This recipe is great! SO simple and quick to make. I made 1/2 the recipe and it fit perfect in an 8x8 cake pan. I thought the mints were just enough too. I can't wait to make more for Christmas Day!

    This is a great gift served in tins. Broken into pieces (like peanut brittle), this recipe makes a large batch. It is very easy and inexpensive. My boys like to crush the peppermint for this recipe and everyone LOVES the taste! I highly recommend this recipe!

    This is a very quick and wonderful treat! I have been making it since the recipe was printed in 2005 and it has been asked for again this year. I'm making 4 batches this year so it might even last a couple days. It makes the perfect gift wrapped up in cellophane with red ribbons. Love it....what more can I say!?
