Turkey Taco Salad

You can substitute ground beef for the ground turkey. To make a vegetarian salad, leave out the meat and add your favorite canned beans in step two instead.

Ingredients

  • 4 tablespoons olive oil
  • 1 small onion, diced
  • 1 pound ground turkey
  • 1 small zucchini, diced
  • 1 red bell pepper, ribs and seeds removed, diced
  • 1 1/2 cups prepared green salsa
  • Coarse salt and ground pepper
  • 2 heads Boston lettuce, leaves separated
  • 1 1/2 cups crushed tortilla chips
  • 1 cup small cherry tomatoes, halved
  • 1 cup (about 4 ounces) shredded cheese, such as white cheddar or Monterey Jack

Directions

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add onion, and cook, stirring often, until translucent, 5 to 7 minutes. Add turkey; cook, stirring often, until starting to brown, 5 to 7 minutes.

  2. Add zucchini, bell pepper, and 1 cup salsa; cook until vegetables are crisp-tender, 5 to 6 minutes. Season with salt and ground pepper. Transfer to a plate, and let cool.

  3. In a large bowl, toss lettuce with tortilla chips, tomatoes, and remaining 1/2 cup salsa and 2 tablespoons oil. Transfer to serving plates, and top with turkey mixture and cheese.

    I do not know why you are so hung up on nutritional values. There are plenty of websites you can go to and get the information yourself if it is that important to you. These recipes give you the exact ingredients, look it up yourself.

    This recipe might sound bland, but it's actually really good. It's also quick, easy, and versatile. You can add veggies, corn, beans, seasoning, etc. My husband and I both love it!

    marym, would you be willing to share your recipe? I would love to have a jar of taco seasoning on hand.

    I often do what this recipe calls for, add prepared salsa or picante sauce, whatever is on hand. It works great, and it would keep this recipe from being too bland. Plus, ground turkey is a drier than beef, so salsa would probably be preferable to dry spices.

    Actually, I think that Creative JoAnne is on to something. The recipe looks bland to me. No seasoning? No spices? About a year ago I did a little research on the internet and was able to cobble together a recipe I like for taco seasoning made from scratch. I make a huge jar of it so it is always ready to use. And in making my own, I can limit the amount of salt, make it as hot/spicy as we like and avoid other fillers. Plus, it's less expensive if you have a location where you can buy spices bulk

    I have made taco salad for years using a package of dry taco seasoning in the ground turkey. I add 1 can of drained black beans and 1 can drained corn.
    I layer meat mixture on bed of shredded lettuce with cilantro and top with diced fresh tomatoes and a handful of shredded yellow cheese. For additional spice we shake on some prepared green salsa..I serve with warm corn tortilla's. It is a semi-weekly main stay.

    Please provide nutrition content.
    I would add 1/4 cup of chopped cilantro to the turkey and vegetables after you take them off the heat.
