Zest limes into a bowl. Squeeze in juice from 1 lime, and whisk in fish sauce and sugar.
Preheat grill to high. Brush shrimp with oil on both sides, and lightly season with salt and pepper. Grill until pink and firm to the touch, 2 to 3 minutes per side.
Toss shrimp with fish-sauce mixture, cilantro, peanuts, and scallions. Juice remaining lime over shrimp.
I made this last night and it was super tasty.
Question: what do you do with the shells? I cooked the shrimp and then put them in the salad but when it was time to eat I had to take the shells off with my hands. What a mess. Is this right? Should the shells come off before the salad is served?
What a great combination, and so easy to make. I served it with some scallion rice and it was a huge hit. I highly recommend this recipe.
Fish sauce is a Thai or Asian sauce make with fish. It should be in the ethnic food aisle in any good grocery store or of course in an Asian grocery store.
