Homemade Mayonnaise

Use to make Esca chef David Pasternack's Grainy Mustard Sauce.

  • Yield: Makes about 1 cup

  • 3 large egg yolks
  • 2 tablespoons lemon juice
  • 10 tablespoons plus 1 1/2 teaspoons canola oil
  • 1 tablespoon plus 1 1/2 teaspoons olive oil
  • Pinch of sea salt


  1. Place egg yolks and lemon juice in the bowl of a food processor. With the motor running, slowly add both oils; process until well combined. Add salt and pulse to combine.
