Slow-Roasted Tomatoes

Ingredients

  • 3 plum tomatoes, halved lengthwise
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves, or 1/4 teaspoon dried
  • Coarse salt and ground pepper

Directions

  1. Preheat oven to 325 degrees. Place tomatoes on a rimmed baking sheet, cut side up. Drizzle with oil, and sprinkle with thyme leaves; season with salt and pepper.

  2. Roast until tomatoes begin to collapse, brushing occasionally with pan juices, about 90 minutes.

    These are awesome! I even put a little shredded parmesan on them the last few minutes. I've made them three times now and love them! Make way more than three tomatoes at a time. I fill a whole rimmed cookie sheet. They are wonderful leftover!

    Okay, I roasted them in the toaster oven, and they were AWESOME!!! I didn't have anything else to put in the oven with them, like Caroline suggested, but wanted to save energy, so it worked perfectly. Just thought you'd like to know.

    I guess this may depend on the type of oven you have but how about putting another dish in the oven alongside this one to conserve both time and energy?

    What about roasting them in a toaster oven to conserve energy? I'm going to try it tomorrow for V-Day. I'll let you know how it turned out! :>)

    For the previous contributor: make a large quantity and freeze them. Then you won't feel so guilty, that's what I do anyway.

    Oven roasted tomatoes are delicious, but this is an terrible waste of energy to bake such a small portion for an hour and a half. We all must be more conscious of our wasteful energy habits.

    this sounds like a great side dish with nice mild seasoning, that can be put together easily and put away in the oven to bake while the rest of the meal is prepared.
