Banana Fritters

Serve the fritters with fresh fruit for a delicious breakfast. From the book "Jamaican Cooking," by Lucinda Scala Quinn (Macmillan).

  • Yield: Makes 6 servings
Banana Fritters

  • 6 ripe bananas
  • 2 eggs, beaten
  • 3/4 cup all-purpose flour
  • 3 tablespoons vegetable oil


  1. In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey.

    These where really - really good! The bananas I used where really sugary and sticky so I could have used more flour. Other than that an awesome taste with minimal ingredients.

    These are great. I can never make pancakes look good, but these turned out perfectly, right from the first one. I added 2tsp of good quality unsweetened cocoa powder and they were delish. An instant hit.

    My four year old loves Bananas. Every day after school he begs for one. My Grandmother used to make these a sweet treat after dinner. I tried make them once and failed horribly. I saw the video and I just made them for the first time tonight. I made a half batch just in case... They came out perfect! Like my Grandmother used too, I added a pinch of pure almond abstract and a bit of confectius sugar to top it off. My four year old and my husband loved it. Thanks Lucinda!

    Just made these delicious fritters for tomorrow's breakfast - boy are they good - just out of hand. Couldn't be easier or tastier. A sure hit around here I'm betting.
