The basis for this recipe is the simple sugar cookie, enhanced with almonds and a hint of lemon. Once they are baked, the cookies resemble a sand dollar.

  • Yield: Makes 2 dozen

Ingredients

  • 1/4 pound (1 stick) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large whole egg
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon finely grated lemon zest
  • 2 1/2 cups sifted all-purpose flour
  • 1/4 teaspoon table salt
  • 1 large egg white
  • 1 teaspoon water
  • Sliced almonds, for decoration
  • Cinnamon sugar, for sprinkling

Directions

  1. In the bowl of an electric mixer fitted with the paddle attachment, cream butter on medium speed until fluffy. Gradually add sugar, and beat until light-colored.

  2. Beat in egg, egg yolk, vanilla, and lemon zest. Sift flour with salt, and add to butter mixture. Mix on low speed just until dough comes together. Wrap and chill for several hours.

  3. Preheat oven to 400 degrees. Whisk egg white and the water in a small bowl. Set aside. Roll out dough to 1/8 inch thickness. Cut with a 3-inch round cutter, and place on ungreased baking sheet. Brush with egg-white mixture, decorate with 3 sliced almonds, and sprinkle with cinnamon sugar. Bake until golden brown, 8 to 10 minutes, rotating halfway through. Remove from oven; allow to cool.

    Nutritional information, sugar, fat, diet, etc., etc. Has anyone MADE these cookies, and how are they?

    I try and use many of Martha's recepies and have done so for many years. They have never had any nutritional info with them. There are many other food sites that have this kind of info, so I suggest you visit them. Stop complaining about not having this info. For low fat/calorie cookies, go to the diet section of your local grocery store. I am sure you will find them there.

    Oh, I do so agree with mykele. Enough already about the nutrition of a cookie. If you are so concerned about your diet, then DON'T EAT COOKIES. Cookies are not diet food. They are a treat. They usually contain lots of fat and sugar. If you really need to know the dietry information check the web for a converter. There are plenty out there. Just stop complaining because you have to do a little work.

    I would strongly advise those with important nutritional information needs to buy cookbooks that do give them the nutritional informa tion. This site gives us free recipes that are pretty standard with ingredients and are NOT low calorie for the most part. Cookies are not diet food.

    Enough already about nutritional information. Cookies are not basically diet food. If your dietary needs are essential to your well being, there are special cook books themed to various dietary needs that give a good range of recipes. There a re conversion tables available also. The MS site is not set up for that info and what we do get is a freebe anyway and not always accurate as to ingredients and measurements.
