- 2 fresh ripe mangoes, peeled and pitted
- 1 cup Aperol or Campari
- 2 cups dry white wine
- 2 cups prosecco
- 4 slices orange
- 4 large green olives with pits
Place mangoes and aperol in the jar of a blender and puree. Place 1/4 cup mango puree in each of 4 glasses. Fill with ice; add 1/2 cup white wine and 1/2 cup prosecco. Add an orange slice to each glass. Spear each olive with a toothpick and add to each glass. Serve immediately.
