Mango Spritz

2 fresh ripe mangoes, peeled and pitted

1 cup Aperol or Campari

Ice

2 cups dry white wine

2 cups prosecco

4 slices orange

4 large green olives with pits

Step 1
Place mangoes and aperol in the jar of a blender and puree. Place 1/4 cup mango puree in each of 4 glasses. Fill with ice; add 1/2 cup white wine and 1/2 cup prosecco. Add an orange slice to each glass. Spear each olive with a toothpick and add to each glass. Serve immediately.
While the Spritz is arguably the most popular cocktail in northern Italy, its bitter undertones can be difficult to appreciate at first, especially in cultures not as accustomed to herbal flavors. This gently tropical version, on the other hand, smooths away the bitterness with a mellow, barely-sweet ripple of fruit providing a thoroughly enjoyable entry into the world of Italian apéritifs.
