Green Beans with Caramelized Shallots

Ingredients

  • 3 tablespoons butter
  • 6 shallots, peeled and thinly sliced into rings
  • Coarse salt and ground pepper
  • 1 pound green beans, trimmed

Directions

  1. In a medium saucepan with a tight-fitting lid, melt 2 tablespoons butter over medium heat; swirl to coat bottom of pan. Add shallots; cover. Reduce heat to medium-low; cook, stirring occasionally, until golden brown, 15 to 20 minutes. Set aside.

  2. Meanwhile, in a large pot of boiling salted water, cook green beans until fork-tender, 4 to 6 minutes. Drain; return to pot. Toss with remaining tablespoon butter. Season with salt and pepper.

  3. Transfer green beans to a serving dish; top with caramelized shallots.

    We were looking for a terrific side dish for Thanksgiving and tried this. We loved it as well. This was my favocite side of all of them. I agree with Miss Georgia - we had to cook the shallots a bit longer to get them to carmelize. We also improvised and added a few pinches crumbled bacon to it for some extra texture, flavor and color. Everyone raved about this dish!

    I made this for Thanksgiving a couple years ago -- my family LOVED it and it's been asked for ever since! It's really easy to make, although I think it takes a little longer to caramelize the shallots -- perhaps I could be doing something better :)
