Peel and slice thick stems from broccoli; separate florets.
In a skillet, bring water to a simmer over medium-low heat. Add stems and florets; cook, covered, until bright green, 4 minutes.
Stir in olive oil, minced garlic, salt, and crushed red pepper. Cook 4 minutes.
Turn off heat; stir in vinegar.

I made this for the first time last night. I LOVED it. I only like my broccoli cooked and this is now my new fav. I can't wait for lunch. I have leftovers. :)
I have been told the same thing about microwaving--I rarely use it for that very reason. I don't know where I got that information, but I will look into it and let you know if I find anything.
One of my all time favorite foods (as an adult) is BROCCOLI! Happiness is a big bowl of chopped or cut broccoli (from bags of frozen, then microwaved) either alone or with frozen corn and a touch of Smart Balance mayo and/or a sprinkling of finely shredded cheeses and garlic croutons.
My concern is that there could be a loss of up to 75% of the antioxidant content through the microwaving process.
Does anyone have a reliable source to confirm this information?
I love broccoli and this is my favorite way to cook it. We REALLY like garlic so I usually throw 2 or 3 large cloves in and use a bit more than 1/2 t of pepper flakes. I steam the broccoli right in the pan with just a little water so there is no reason to drain, it evaporates right off. I usually squeeze a half a lemon over it too. Great way to spice up almost any meal!

I put a little water in the fry pan, covered it and let the brocs steam in the skillet. It doesn't take too long for the water to evaporate even with the cover on. I wouldn't have thought to use vinegar as I've always just added a splash of fresh lemon juice, but since the recipe doesn't specify which type of vinegar to use, I used seasoned rice vinegar and it really added a nice touch. I"ll definitely prepare brocs this way again.
I think they may have left out a step. After the broccoli has simmered in the water, shouldn't it be drained, returned to the pan and then continue with step 3?
It sounds good but I think I missed something. How much water am I cooking the broccoli in? If I'm covering the broccoli do I drain the water before I add the olive oil and other ingredients?
