Black Bean Soup

Ingredients

  • 1 cup thawed Garlic-Pepper Sauce
  • 1 can (14 1/2 ounces) reduced-sodium chicken broth
  • 2 cans (15 1/2 ounces each) black beans, drained and rinsed
  • Coarse salt and ground pepper
  • 2 to 3 teaspoons fresh lime juice
  • Sour cream (optional)

Directions

  1. Step 1

    In a medium saucepan, heat Garlic-Pepper Sauce over medium heat. Cook, stirring occasionally, 2 minutes.

  2. Step 2

    Stir in black beans, chicken broth, and 1/2 cup water. Bring to a boil; reduce to a simmer. Cook 5 minutes.

  3. Step 3

    Puree with an immersion blender or regular blender (work in batches, filling container halfway each time). Season with salt and pepper.

  4. Step 4

    Reheat if necessary. Stir in lime juice; serve with sour cream, if desired.

    I added bacon (my weakness and first love) and chili powder. I also didn't puree the beans, and it was delicious. Definitely use the lime, it adds the perfect flavor. My husband said it was the best black bean soup he ever had. Thanks, Martha!

    I really love this recipe but I've adapted it to suit my taste. I make the Garlic-Pepper Sauce per the recipe and love keeping it for other dishes too. When it comes to the soup I add about 1/2 C of salsa or a can of diced tomatoes to the recipe and then taste after I have the beans, sofrito, tomatoes and stock to add more cumin or oregano, s&p to taste. Then you blend the whole thing and serve it with lime juice, sour cream, cilantro and taco chips on the side.

    This is a great soup. It is so simple but taste delicious! Be sure to add the lime juice and some sour cream though before you serve it, as is suggested.

    This is a great soup! The best part is the garlic-pepper sauce which I cannot wait to use for other recipes. I can imagine it ice cold as a salsa for tortilla chips or maybe as a condiment for Dorado or Merluza.

    You can buy the Sofrito sauce, ie Garlic Pepper sauce in the freezer section of grocery stores. Its available in the Market Basket stores here in Massachusetts.

    Real Simple had a similar recipe a few years ago that uses salsa (fresh from the refrigerated case at the store). I make it frequently and it is good.
