Oven-Roasted Asparagus

Although many people believe that thinner asparagus spears are more tender than thicker ones, thick spears are actually just as tender. If the asparagus stems are tough, remove the outer layer with a vegetable peeler.

Ingredients

  • 1 1/2 pounds asparagus
  • 2 teaspoons olive oil
  • 1/8 teaspoon salt
  • Pepper

Directions

  1. Step 1

    Preheat oven to 400 degrees. On a baking sheet, toss asparagus with olive oil, salt, and a pinch of pepper. Spread in a single layer.

  2. Step 2

    Roast until tender, 10 to 15 minutes, in oven.

    In the few times I've roasted asparagus, I think that a little shorter time at 450 degrees keeps a little of the crispness of the asparagus while bringing out that flavorful blackening. Regardless, my new thing is roasting everything in olive oil.
