Thank you. My husband and I just harvested our beets from our garden and made two batches for the Phat Beets. It was some what of a process, but a lot of fun. We will know in a couple of weeks how they turned out. So far they are just very pretty in the jar.
You can use any tall pot just be careful so jars don't bang together to hard. They could break. Beet pickles will last 6 months to a year if kept is a cool dry area. If lids get rusty don't use.
I have never canned before. If I don't have a canner, can I use a stock pot? Also, how long will these keep in the pantry? My garden is overflowing with beautiful beets and I would love to pickle some.
