Put cocoa powder in saucepan. Stir in milk a bit at a time until cocoa liquefies; add remainder. Add chocolate chips; melt over medium heat, stirring occasionally.
Bring to boil, stirring occasionally. Remove from heat; stir in vanilla and pinch of salt. Ladle into mugs; top with whipped cream, if desired.
Are you sure about adding 1 tablespoon of vanilla extract? In two other hot chocolate recipes from this site, the recipes are exactly the same except the other two recipes called for 1 teaspoon of vanilla extract.
I used 2 cups rice milk and 2 cups coconut milk. It's totally dairy free except for the chocolate chips. And you can buy chocolate chips that are dairy free at health food stores. Mucho yummo!!!!
