Stir-Fried Turkey in Lettuce Wraps


To serve the wraps as sandwiches, tuck them into a split, scooped-out baguette for a variation on banh mi.

  • 1/4 cup soy sauce
  • 4 teaspoons fish sauce
  • 4 teaspoons sugar
  • 1 tablespoon vegetable oil
  • 1 large shallot, finely chopped
  • 2 tablespoons minced peeled fresh ginger
  • 2 garlic cloves, minced
  • 1 small jalapeno or serrano chile, seeded and finely chopped
  • 1 pound ground turkey (93% lean)
  • 2 large heads Bibb, Boston, or iceberg lettuce, leaves separated


  1. In a small bowl, combine soy sauce, fish sauce, and sugar and stir until sugar dissolves. Set sauce aside.

  2. Heat a large skillet or wok over high until hot. Add oil and swirl to coat skillet. Add shallot, ginger, garlic, and chile and stir until fragrant, about 30 seconds. Add turkey and cook, breaking up meat with a wooden spoon, until almost cooked through, 5 minutes. Add half the sauce to skillet and stir until meat is cooked through, about 2 minutes. Serve in lettuce leaves with remaining sauce.

You can substitute any ground meat -- pork, chicken, or beef.

    This is really good! Super quick and easy. I especially like that the ingredients are pretty simple. I think I was a little liberal with the soy sauce because they were a little salty, but I will definitely make these again. And again, and....well, you know what I mean :)

    I LOVE this recipe! So messy, but so good. They neglected to mention the garnishes of julienne of carrot and scallion and a spritz of fresh lime, which all together make for the most delectable, fresh and light dish. You must try it! You'll love it.

    I make this all the time and If you don't have an ingredient in the fridge it still tastes great! LOVE IT!

    One of the first recipes of late that my boyfriend has raved about. Super fast and easy to make with tasty results. I have made it with both ground turkey and ground chicken and we liked it both ways. This is one recipe that will be made often.

    Not my fav Martha recipe. Kind of hard to eat it. The turkey tasted pretty good, however I wouldn't make it again.
