Preheat oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).
Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.
For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).
Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You'll have 12 to 15 pancakes.) Serve warm, with desired toppings.
This recipe yielded decently fluffy pancakes, especially given they didn't call for beaten egg whites. Given the ingredients, I thought these might be a little bland tasting, so I added some things I read on other sites that other people added such as cinnamon, nutmeg, vanilla, and lemon juice. These add-ins gave the pancakes a nice little kick. I then topped with fresh bananas and toasted walnuts. I think candied walnuts would've been nice. Maybe next time.

I make this recipe vegan using ground flax as egg replacer and using half whole wheat flour. The flax lightens the density of the whole wheat and they are absolutley spectacular! Not to mention even healthier.
I just realized you only use the oven to keep them warm.. I never read the last past when making these, I just have the ingredient list written down. I do add cinnamon and vanilla to the pancakes, use oil vs butter, and do not add the sugar. Great recipe!
Our favorite pancake recipe, I make this at least once a week for my family. We do not use the oven and instead cook them right on the stove top. So light and fluffy! Great with sautéed strawberries and blueberries on top!

These were really easy to make, but really delicious and fluffy. I didn't have really maple syrup on hand and I hate using the fake stuff, so I added a bit more sure and some cinnamon and just served with roasted apples. Fabulous!

These were delicious. But if you want to make them a little healthier and add in a nice nutty flavor? Try mixing in 1 part whole wheat to every 2 parts white flour. That's the secret to my great homemade pancake recipe.

Absolutely delicious! I doubled the recipe however only put the 3 tsp of baking powder and they came out delightfully! The perfect pancake recipe for any day of the week! (the only downside was that it was so cold this morning that the butter re-solidified in the mixture!) and also if you use non stick cookware like scanpan a minimal amount of butter is needed to stop from sticking! Happy Cooking!
I forgot to add that these made about 6 "normal sized" pancakes for me...so think about doubling up if you really want to serve 4.
These were fantastic! I highly recommend adding 1/2 tsp of vanilla extract. I am very satisfied and they don't darken extremely quick so surely they cook thoroughly (nothing ickier than a gooey pancake). Try it! Great recipe!
Wow! Just what I've been looking for... a simple basic recipe for Awesome Pancakes! Perfect for two. Light and fluffy, and tasty too. Tailor to suit... added cchips. The details on prep really helped... spooning the flour, whisking dry ingredients, and whisking wet ingredients. I beat the egg first, beat in the milk, then drizzled in melted butter while whisking. The eggs frothed, making for a super light batter. Also used aluminum free baking powder - you can really taste the difference.

Great recipe! Had a brunch with friends and made these. I added cinnamon to the batter to give it that little extra spunk. Also, I find that cooking pancakes with butter in stead of oil adds a nice flavor.

What a great pancake recipe! So simple to make and a single batch is great for two people. Thanks for the tip to add a splash of vanilla to the wet mixture. I added a 1/2 tsp and that did the job. I also used cooking spray in between batches instead of oil. I definitely recommend this pancake recipe!

I just made these pancakes for my children before school and i would have to disagree with Cheftb, they were thick and delicious. I would rate it a full 10/10. These are soooo good. These are the first oopancakes I have ever made handmade and they are so good! They taste just like any ordiinary pancake. Plus, it saves me money from buying the pancake mix all the time from the store, and now, i can just make them handmade.

I love this recipe! I've been making them since 2006. This Christmas I made a premix batch in a glass container, attached the recipe on a tag, and worte a personal note and ended with "I's a good thing." My sister loved it and her kids too.

After working in the garden all day, my husband suggested we make "breakfast" for dinner. I remembered this recipe from an Everyday Food blog last week and decided to try it. This recipe is all we use now. In the associated article 'Pancakes with Allie" are the variations for Buttermilk, Whole Wheat and more. We use the WW with Buttermilk(instead of yogurt). If you don't have buttermilk, try substituting with milk and a tsp of vinegar or lemon juice. They are exceptional.. Spiced with some cinnamon, splash of vanilla, and you can't go wrong. The mix stores very well.
These are amazing!! I scaled back on the sugar by half, threw in bananas with blueberries or strawberries, and added a little bit of ground cinnamon for flavor to make up for the halved sugar. Result: Tasty and healthy!!

I substitute the all-purpose flour with White Whole Wheat and increase the milk to 1 1/4 Cups and be sure to let the batter rest for at least 10 minutes.
