With Everyday Food editor Sarah Carey’s tricks, this super-fast, all-in-one pasta dish couldn’t be easier to make.
In a large pot of boiling salted water, cook pasta until al dente. Reserve 1/2 cup pasta water; drain pasta, and return to pot.
In a food processor, puree parsley, walnuts, Parmesan, garlic, lemon juice, and 2 tablespoons water until a paste forms. With machine running, add oil in a thin stream; process until very smooth, about 1 minute. Season pesto with salt and pepper.
To pasta in pot, add pesto, 1/4 cup pasta water, and spinach; toss to combine. Thin with pasta water as needed. Serve sprinkled with walnuts and Parmesan.
So delicious & easy to make! I used whole wheat fettucine, I think it adds a heartier flavor. Perfect with the spinach & walnuts. I also used 1 cup parsley & 1 cup nettle just because it's so good for you. YUM!!!!! :) Happy I came across this recipe.
We loved this! Made it with whole-wheat linguini. Very easy to put together. I served it with roasted drumsticks.
Hi kitchencartsromona !
I love cilantro too but because it's such a strong flavour I wouldn't recommend substituting it for all the parsley - try 1/2 and 1/2 and see what you think.
I am wondering if I could substitute cilantro for parsley. My family likes that flavor over parsley.
