Farm-Stand Find: Maple Syrup

The flow of sweet sap from maple trees is a sure sign that spring is around the corner. It also trumpets the arrival at farm stands of high-quality syrup graded by color and clarity: Grade A light amber, Grade A medium amber, and Grade B (which is even darker and stronger in flavor -- but not further subdivided by color). "When choosing a syrup to put on pancakes or waffles, the best way to find out what you like is simply to taste a range," food editor Kristina Kurek says. "But for the whipped cream and bacon recipes, we did a lot of experimenting to figure out which type suited each dish."
