Ham-Salad Sandwich

Ingredients

  • 1/4 cup reduced-fat cream cheese
  • 1 tablespoon mango chutney
  • 1 teaspoon Dijon mustard
  • 4 ounces thinly sliced deli ham, coarsely chopped
  • Coarse salt and ground pepper
  • 4 slices pumpernickel bread
  • 1/4 English cucumber, thinly sliced

Directions

  1. In a medium bowl, stir together cream cheese, chutney, and mustard. Stir in ham; season with salt and pepper.

  2. Make two sandwiches with bread, ham salad, and cucumber.

Cook's Note

To store, refrigerate, up to overnight.

    What a quick find and not a lot of ingredients, whew! I substituted cubed ham, pineapple chutney and whole wheat bread. I had the other ingredients on hand. I toasted the bread a little. It was fabulous. Thanks!

    This is a good recipe, thank you! I recommend using jamon iberico rather than standard ham to make it even better. I get my Spanish ham from http://buyjamon.com

    A different twist on a ham salad sandwich. A favorite I keep coming back to. Delicious!
