Tilapia and Quinoa with Feta and Cucumber

Protein will keep you full longer, and this recipe has two lean sources of it.

Ingredients

  • 1 cup quinoa
  • Coarse salt and ground pepper
  • 2 1/2 teaspoons extra-virgin olive oil
  • 1 pound boneless, skinless tilapia fillets, divided into 8 pieces
  • 3/4 teaspoon paprika
  • 1 cup English cucumber (6 ounces), diced small
  • 1/3 cup roughly chopped fresh dill
  • 1/3 cup feta (1 1/2 ounces), crumbled
  • 2 teaspoons fresh lemon juice

Directions

  1. Step 1

    In a small saucepan, bring quinoa, 2 cups water, and 1 teaspoon salt to a boil over high. Reduce to a medium simmer and cook until water evaporates, about 15 minutes. Transfer quinoa to a medium bowl and let cool 5 minutes.

  2. Step 2

    In a large nonstick skillet, heat 1 1/2 teaspoons oil over medium-high. Pat fish dry and season with salt and pepper; sprinkle with paprika. Cook fillets until opaque throughout, about 4 minutes, flipping halfway through. Stir cucumber, dill, feta, 1 teaspoon oil, and lemon juice into quinoa. Season with salt and pepper. Divide quinoa among four plates and top with fish.

    Loved this recipe! Used only a pinch of salt when cooking the quinoa as suggested by previous reviewers. Turned out delicious! The recipe was quick and easy to make. Loved the freshness of the dill. Will definitely make again!

    I loved the tilapia! However, I could barely eat the quinoa because it was WAY too salty. I suggest skipping the salt next time and adding more lemon juice.

    This was delicious! Light, healthy, satisfying, all that stuff. I noticed that the written recipe had slightly different instructions than the video, so I followed the video instructions exactly. Worked great, I wouldn't change a thing!

    I made this with salmon instead of tilapia, and it was quite delicious! I sprinkled a little chopped dill over the salmon and it complimented the dill in the quinoa salad really well. I also added some sauteed leeks to the quinoa. Will definitely make this again!

    The tilapia was pretty good and would make it again. I tried to cut the quinoa recipe and half. I used half teaspoon of salt for half cup quinoa and it was way way way too salty. I don't think I would use salt next time. I would use more lemon juice, no salt.

    We eat a lot of tilapia, but this a first time eating quinoa- This recipe was delicious!!! Can't wait to make it again.

    I have not made the tilapia in this recipe, but I have made the quinoa a few times. It was my first experience with quinoa. Very fresh. I like it. Good flavors. Will need to try the tilapia at some point. I just like eating the quinoa salad by itself. :)

    This was yummy, easy and fresh. BUT 1tsp of salt in the 1 cup of quinoa was TOOO salty. I had to start over!

    Don't forget to rinse the quinoa thoroughly before cooking - it will taste much less bitter that way. Going to cook this tonight!

    Very good. I substituted slaw veggies (in a bag) and green onions because I didn't have any feta and tossed in some bragg on the Quenoa. Whole family loved it. Fast too.

    I made this last night - delicious!! It was my first time cooking quinoa AND tilapia and I found both very easy to make. The flavors were perfect (I made it exactly as the recipe stated). Definitely a keeper.
