Cucumber and Watermelon Salad

If not serving immediately, leave out the salt. Refrigerate salad, covered, up to four hours; just before serving, toss with salt.

Ingredients

  • 3 cups peeled and cubed (1/2 inch) English cucumber
  • 3 cups cubed (1/2 inch) seedless watermelon
  • 3 tablespoons fresh lime juice
  • Coarse salt and ground pepper

Directions

  1. In a large bowl, toss cucumber and watermelon with lime juice, 3/4 teaspoon salt, and 1/8 teaspoon pepper. Serve immediately.

    I made this recipe but added some finely minced jalapeno and lime zest to the lime juice. The jalapeno gave a little surprising kick at the end that was just wonderful. One guest said it was like a fiesta in her mouth.

    This is the best (and easiest) summer salad. We have it every time we BBQ. We've shared it with lots of people and no one can believe they never thought of it before. It sounds like a strange combination, but when you try it you will have an A-HA! moment. It's so good- try it.
