Roasting chicken thighs with their skin on helps keep the meat moist, while the pan juices lend lusciousness to the zucchini that roasts alongside.

Since others said this recipe turns out too plain/bland, I added a few things and it came out delicious: whole fresh cherry and regular tomatoes, 2-3 cloves of garlic, half an onion (large dice), and a sprig of rosemary. My only other issue with this recipe was that putting the chicken in a cold pan into the oven seemed to make my chicken stick. Next time I'm going to sear the chicken in the pan with a little oil on the stove first and then add the vegetables and put it into the oven.

Kind of boring... Not very impressed with this at all. The different ingredients never really mixed flavor-wise: you just tasted them individually. The chicken was the best part (but still boring). Won't make it again.

This dish was just OK, I found that the chicken was pretty bland with just salt

I recently planned the menu for a group of 65 women. I chose this meal for our banquet, and it was very well received! Several women asked for the recipe, and were surprised to learn it was only five ingredients! Thanks, Everyday Food, for making me look so good!!

Recipe like this is why I subscribe to Food Everyday. This recipe is simple and delicious. I am surprised at how red-wine vinegar in coucous is so amazing!

Great easy recipe. Very tasty. I did, however, use chicken broth instead of water in the couscous, and my chicken thighs must have been large because it took them an additional 10 minutes to reach 165 degrees. I will make this again!
