Layers of ice cream are molded in a bowl to make this impressive ice-cream cake. A pistachio "rind" is lined with vanilla and filled with watermelon sorbet. The seeds are an improvement on nature: They're bits of chocolate wafers. A sponge-cake layer provides another texture and flavor.

    Looking at the pic of this it doesn't seem to have any nuts in the pistachio layer. Is there a brand without nuts available?

    This recipe is one of my favorites! I made it for the first time over 10 years ago for my sister's birthday and I have made it since. It's a great dish for a Memorial Day or 4th of July party and is a delicious summer treat. I have made the recipe with both chopped up chocolate wafers as the "seeds" as well as mini chocolate chips and like both equally! The only slight challenge can be finding a green pistachio ice cream, since many brands only come in white, but Thrifty makes one! Love it!

    I tried this recipie it was lovely.All my guests were so impressed .they thought it was real watermelon inside.. Really awesome..

    This recipe is wonderful. I used it 12 years ago to make my niece a birthday cake after seeing it in your magazine. She will be turning 16 in a couple of weeks and just asked me if I remembered making her the watermelon cake. The vanilla ice cream recipe is especially delicious. This was fun to make and definitely made a lasting impression :D

    This looks so cute how can I go wrong serving this at a party or just for the family.? Even if I can't get the Watermelon part right it looks great.

    SOOOOOO GOOD!!! Everyone loved it! I had to use green food coloring for the pistachio ice cream - the stuff I found was vanilla looking. The watermelon part was perfectly refreshing!

    I made this cake many years ago for my family, and my sister-in-law still talks about it. Super easy to make. I guess I should make it again this summer and make her happy.
