Creamy Corn

Ingredients

  • 1 box (10 ounces) frozen corn kernels
  • 1/4 to 1/2 cup whole milk
  • 3 ounces reduced-fat cream cheese, cut into pieces
  • 2 tablespoons snipped fresh chives
  • Coarse salt and ground pepper

Directions

  1. Step 1

    In a medium saucepan, simmer corn and 1/4 cup milk over medium heat until corn is tender, 5 to 7 minutes. Remove from heat; stir in cream cheese and chives. Season with salt and pepper. If desired, adjust consistency with a little more milk.

    This couldn't be easier and it is very tasty and falls into my definition of comfort food. I'll make it again but use less cream cheese (probbly half) and think I'll use parsley or green onion tops instead of the chives which I felt got lost in the richness of the cream cheese.

    I made this one for my husband and myself - I found it ALRIGHT but my husband loved it. I decided to make it again for a Thanksgiving dinner we were holding here in London for non-American friends and family and they loved it! No leftovers! :)

    I've been making a cream corn similar to this, but I add some parmesian cheese and a little garlic...it is so good.

    The easiest creamed corn ever, much fresher tasting since you can leave the corn a little "al dente".
    Yes, definitely you can use lower fat milk.

    This was pretty good and super easy. I used a drained can of corn and then also added a little cheddar cheese. My kids didn't care for it, but my husband and I liked it. It was actually even better the next day.

    I made this with modifications. I used green onions in place of chives, added yellow grits to thicken and about 1/2 cup of cheddar cheese in addition to the cream cheese. My whole family loved it! I also used corn cut off of the cob that I had left over from a bbq.
