Mini Honey-Mustard Meatloaves with Roasted Potatoes

Ingredients

  • 2 tablespoons olive oil, plus more for baking sheet
  • 2 tablespoons plus 1 teaspoon honey mustard
  • 2 tablespoons ketchup
  • 1 pound ground beef chuck
  • 1 large egg, lightly beaten
  • 1/2 cup panko (Japanese breadcrumbs)
  • 1 cup shredded white cheddar (about 4 ounces)
  • Coarse salt and ground pepper
  • 1 pound white new potatoes, scrubbed and quartered
  • 1 tablespoon red-wine vinegar
  • 1 head Boston lettuce, torn into bite-size pieces

Directions

  1. Preheat oven to 450 degrees, with racks in upper and lower thirds. Brush a rimmed baking sheet with oil. In a small bowl, mix together 2 tablespoons mustard and ketchup.

  2. In a medium bowl, combine beef, egg, panko, 1/2 cup cheddar, 1/2 teaspoon salt, and teaspoon pepper. Form into four 2-by-4-inch loaves; place on baking sheet. Brush with mustard mixture; top with remaining 1/2 cup cheddar. On another rimmed baking sheet, toss potatoes with 1 tablespoon oil; season with salt and pepper.

  3. Transfer meatloaves to upper rack of oven, and place potatoes on lower rack. Bake until loaves are cooked through, 15 to 20 minutes, rotating sheets after 10 minutes. Remove loaves from oven; continue to roast potatoes until tender, about 5 minutes.

  4. Meanwhile, in a large bowl, whisk together remaining tablespoon oil, remaining teaspoon mustard, and vinegar; season with salt and pepper. Add lettuce to bowl, and toss. Serve meatloaves with potatoes and salad.

Cook's Notes

Panko breadcrumbs, which blend right in and lighten the texture of these meatloaves, can be found in the Asian-foods section of the supermarket.

    This recipe is delish! Boyfriend hates cheese, so I replaced it with some Frank's Red (hot sauce that's not really hot, just flavorful) and some garlic powder to mimic the high notes of the cheese. I served it with mashed potatoes and peas. The alteration came out way better than expected, it was a huge hit, and will be making it again!

    This turned out great and I've made it several times. I like to serve it with peas and strawberries. I need to double the recipe since it's 13 y.o. (football player) favorite so it does not go far.

    I don't really care for meatloaf, myself; I make it because my husband loves it. But even I liked this dish! Great recipe... much tastier than the really ketchup-y versions I recall from childhood. The ground chuck is what makes it especially delicious!

    This is a good go to recipe. I've made this with both beef and ground turkey and its great both ways. My favorite loaf recipe!

    We have made this several times and it is now our favorite meatloaf recipe. It is great with the salad and potatoes.

    If you want the nutrition info, you can buy the magazine or you can use one of the many free recipe nutrition caluclators available on the web. Would it be nice to have? Sure. But I am really tired of the helpful comments getting drowned out by the whiny demand for extra info from a free website.
