Made this last night (without changing a thing) and it was a big hit!
This was dinner tonight. However, I used chipotle chiles in adobo sauce (because I didn't feel like going to the store and I had them in the pantry) and when I added the corn, I added some dried cilantro. The chiles added so much flavor! Also, I used Miller Lite, which was perfect, maybe next time, to fit the theme, I'll use Corona or Tecante. So delicious. Also, I used a brownie pan. The extra stuff that leaked on the side was great to throw on top!!!
After reading the reviews I added another jalapeƱo, a lot more garlic, lime juice and cilantro. Without the extra flavore the pie would have been very bland. Thanks, earlier reviewers.
Yum! I am not a vegetarian but my sister-in-law is so I made this in addition to tacos. All the meat-eaters loved it! I think the next time though I will either leave all the water (or beer) out completely or at least reduce the amount by half. It was a bit too much I think.
This is an excellent recipe. It's also great as left overs. I like add some chopped cilantro and lime juice to the bean mix.

StaceyA99 - I agree with all your additions (except meat as we're vegetarian) plus a splash of lime juice, or serve with lime wedges. And there's no need to mess around with trimming the tortillas - I make this in a 10 inch, deep dish pie plate.
Just made this for dinner this evening. It was excellent. Even my non-vegetarian boyfriend loved it.It was very simple to make and full of flavour.

I think this recipe sounds great! I already make one similar but I use corn tortillas and slice them in strips.
My husband loved this and it was so easy. We had all of the ingredients all ready. We added it to our Meatless Monday menu. Thank you.
I'm also diabetic, and I agree. The recipes sound delicious, but I often don't try them because I'm unsure of the nutritional values.
Please add the nutritional information to all recipes. For lots of people with health issues, it's imperative. Thank you for your consideration.
That's just what I was looking for! What is the breakdown of sodium, fat, calories, etc?

I have learned from experience that the Everyday food recipes tend to be a bit bland for my family so I added 3/4 # ground sirloin, some chili powder, a pinch of caynne, a bit more cumin in step 2 and the only beer we had in the fridge--one lone can of PBR. I also threw in some fresh cilantro to the mix before assembly too--the end result was so good!! Next time, I might let it simmer a bit longer to evaporate some of the juices. I will definately make again.
Made this for the Superbowl and the guys loved it. It was hearty and easy to make. Nothing in it was overpowering, just make sure you let the beer boil off enough on the stove top. I will definitely make this one again!

It wasn't bad, but the taste of onion, garlic, scallion and beer was overpowering. I liked the tortilla pie concept, however, and I'll try this again as a simple version using just refried beans as the filling.
Oh, I forgot to add, I used a 10inch springform pan, as not to have to trim the tortillas.
This was a hit for us! My husband was surprised that there wasn't any meat because it was so flavorful. I agree that condiments are needed: salsa, sour cream, guac.
I would say this was good. My husband really LOVED it, though. Definitley serve with salsa and sour cream on the side. It will be a regular part of our menu from now on.
I should add that I didn't have all the correct ingredients so I substituted a few things. Beer for water. A 4 oz can of diced green chilies for the jalapeno. One can of red kidney beans for black. I was short one tortilla so I used tortilla chips for the top layer. I forgot to add the Cumin. Lastly, I used more cheese than called for. I'm making it tonight the correct way and hoping it's just as good!

My mama made something similar in the crock-pot with refried beans and ground beef-- always a family favorite! I'm trying this version tonight!!
Made this for dinner and I was very surprised at how delicious and filling it was! I used about 2 cups of (homemade) chicken broth (instead of water or beer), added a can of (drained) diced tomatoes to the mixture, and sprinkled in some chili powder for extra seasoning. I didn't trim the tortillas, just used a 10" pan and wedged them in place. Will definitely make this again!
