Line a 9-by-13-inch baking dish with foil, allowing a 2-inch overhang. Coat with cooking spray. Set aside.
Process almonds in a food processor until finely ground. Add flour, sugar, baking powder, and salt; pulse to combine. Add butter; process until mixture resembles coarse meal.
Lightly beat egg, egg yolk, and vanilla in a small bowl. With processor running, add egg mixture; process just until clumps form. Pat dough into bottom of dish; refrigerate until firm and cold, about 30 minutes.
Preheat oven to 350 degrees. Prick dough all over with a fork. Bake until edges are golden, about 25 minutes. Let cool on a wire rack.
Spread jam over crust; top with granola. Bake until jam is bubbling and granola topping is browned, about 30 minutes. Let cool on wire rack. Lift out, and cut into 2-inch squares.
Bars can be stored in airtight containers at room temperature up to 1 day, or frozen up to 1 week.
Am I correct in assuming that the Almond Coconut Granola is not cooked before using in this recipe?
@ barbara_moore: If you use fresh fruit you might want to coat the fruit with flour or cornstarch to prevent it from "bleeding" and sugar since jam is very sweet. The jam probably also makes the bars easier to cut and the top crisper but I think fresh fruit would still taste good!

Ok, I just made this Blueberry Bonanza Bar recipe and it taste ok, but, if you added cream cheese as a layer it would have been even better. Depends on how many calories you're looking for. I really like the ease of making it, very simple!
@Lella
Anytime you see text in blue in the ingredient list, it is a link to the recipe for that ingredient. So if you click on "Almond-Coconut Granola", it takes you to that recipe on the site.
do you think these can be made with fresh fruit instead of jam?
These are so good! Just made them yesterday. I used Black Raspberry Jam instead of Blueberry because it's what I had on hand. I added a little bit of extra coconut at the end after I took them out of the oven for the last time... Perfect! Will definitely make again
Excellent! Loved it. Had a hard time finding blueberry preserve at the local supermarket. My one daughter did not like the coconut but everyone else in the family gave it 5 out 5 stars.
Soapylulu,
I didn't search for "Homemade Granola". I see there are many to choose from! Thanks for the response.
Lella I'm pretty sure it's the one called Homemade Granola on this site. It's got almonds and coconut in it.
Is there a recipe for the almond-coconut granola? I searched your website
