Cook's Notes

You can look for long-stemmed artichokes in specialty markets during artichoke season (March through May), but regular or baby artichokes work just as well.

The most delicious sandwich. All who ate it said it was one of their "top meals". Really satisfying to make too. The mint leaves really add a nice balance to the flavorful lamb. Artichokes and escarole are very interesting. All together this sandwich makes people very happy.
