This smoothie of cucumber and blueberries is brimming with antioxidants. It makes a great start to any day for breakfast or a mid afternoon snack.

Ingredients

  • 1 medium cucumber, peeled, seeded, and cut into 1-inch pieces
  • 1 cup frozen blueberries
  • 1 cup white grape juice or pear juice
  • 1/2 cup low-fat plain yogurt

Directions

  1. Blend cucumber, blueberries, juice, and yogurt.

    Hello el81, could you ll me how you arrived @ the Potassium level of 621mg? I am a dialysis patient and that level is dangerously high for me. I know yogurt is usually high, but I can substitute for that. Anything else contributing to the level o K? Thanks!

    Very tasty smoothie and a great way to make a dent in a crop of summer cucumbers. I made as directed with white grape juice.
