Pineapple and Ginger Smoothie

Ingredients

  • 1 cup fresh or frozen pineapple, cut into 1-inch pieces
  • 1 inch piece fresh ginger, peeled and minced
  • 1/2 cup low-fat plain yogurt
  • 1 cup pineapple juice
  • 1/8 teaspoon ground cinnamon
  • 1/2 cup ice (if using fresh pineapple)

Directions

  1. Blend pineapple, ginger, yogurt, pineapple juice, cinnamon, and ice (if using fresh pineapple).

    This was good, it had a nice bite to it. I prefer a thicker smoothie. I'm going to try adding a banana nest time

    This was delicious! The spicy ginger provides a nice zing in the morning without caffeine. I used frozen pineapple, 1 cup of coconut water instead of the pineapple juice and 1 container of vanilla soy pudding instead of the yogurt because that's what I had on hand. Also drizzled a little honey in. Made for a very refreshing way to start the day.
