Rustic Croque Monsieur


Parmesan cheese helps gives this French sandwich its salty flavor.

  • 2 tablespoons unsalted butter, plus more for bread
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 cup grated Gruyere cheese, plus 8 slices
  • 1/2 cup grated Parmesan cheese
  • 8 thick slices rustic bread
  • 12 slices ham
  • Dijon mustard, for bread


  1. Melt butter in a saucepan over medium heat. Whisk in flour. Add milk; bring to a simmer. Cook, whisking frequently, until sauce thickens, about 5 minutes. Remove from heat. Add grated cheeses. Whisk until melted and smooth.

  2. Butter bread. Arrange half the slices, buttered side down, on a rimmed baking sheet. Top each with 2 slices Gruyere and 3 slices ham. Spread mustard onto unbuttered sides of remaining bread. Place on top of ham, buttered side up.

  3. Preheat broiler. Heat a grill pan or skillet over medium heat. Cook each sandwich until golden brown and cheese melts, about 5 minutes per side. Return to baking sheet. Spoon 1/3 cup sauce over top of each sandwich. Broil until tops are bubbling and golden brown, about 3 minutes.

    Good starting place. There are a couple of things wrong with this recipe, in my experience. First, I used a microplane to grate the gruyere and parmesan. To compensate I used slightly more than 1/2 cup of cheese because using a microplane makes the cheese light and airy. I think it would be helpful to list a weight for the cheese, ex. 2 oz, grated, instead of a volume measurement. My bechamel was very thin, maybe there wasn't enough cheese? Not sure but I'd be tempted to use 3T flour/butter.

    I like a Croque-Monsieur as an open faced sandwich. I don't know why Martha has it like this. The picture doesn't even show the bechamel sauce on top. It just looks like a regular ham and cheese sandwich which a Croque-Monsieur certainly isn't. Add a fried egg on top and you have a Croque-Madame. Love that too!

    Thought I should also mention that...this is French, so of course it is quite rich and not the kind of sandwich to eat with your hands. But totally worth it.

    I think this recipe makes a delicious sandwich. If you love all things French, you will enjoy making croque-monsieur. On another note, if you loved the movie "It's Complicated," you will enjoy making this sandwich. One more thing, my husband loves this too. He has ordered croque-monsieur at a restaurant and said mine (this recipe) was much better.
