Herbed Bocconcini

Ingredients

  • 1 pint (about 11 ounces after draining) bocconcini
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon red-pepper flakes
  • 1 tablespoon minced fresh chives, or chopped parsley
  • Coarse salt and ground pepper

Directions

  1. In a large bowl, combine ingredients and season with salt and pepper.

  2. Marinate in a bowl at room temperature until ready to serve, at least 20 minutes and up to 2 hours.

    Easy and looks interesting on the table. Not going to take the award for most fabulous appetizer at the party but beats a bag of chips!

    Great, quick, "small bite". Make sure to use corse salt and freshly ground pepper. I also use walnut oil sometime to change the flavor. Also great to use these left over marinated bocconcini on the mini meatball pizza's.
