Maple Vanilla Gastrique


This recipe for maple vanilla gastrique, courtesy of chef Tom Colicchio, is an ideal addition to Cornish game hen.

  • 1 cup pure maple syrup
  • 1/2 cup sherry-wine vinegar
  • 1 vanilla bean, scraped
  • 1 star anise
  • 4 black peppercorns
  • 1 dried bay leaf


  1. Place all ingredients in a medium saucepan over medium heat. Bring to a boil, then reduce heat to a simmer; cook until mixture coats the back of a spoon, about 10 minutes. Strain mixture through a fine mesh sieve, discarding any solids, and keep warm until ready to use.
