Use this brine to make Andrew Carmellini's ("Urban Italian") Chicken Leg Cacciatore dish.
- 3/4 cups coarse salt
- 3/4 cups sugar
In a large pot, combine salt, sugar, and 4 cups water. Bring to a boil over high heat. Remove from heat and transfer to a nonreactive container. Let cool and refrigerate overnight before using.
