Classic Chicken Salad

Try serving this Classic Chicken Salad on a bed of mixed greens or on whole-grain bread.

Ingredients

  • 1 cup diced chicken
  • 1 heaping tablespoon minced red onion
  • 1 heaping tablespoon minced celery
  • 2 teaspoons chopped fresh flat-leaf parsley
  • 2 teaspoons freshly squeezed lemon juice
  • 2 teaspoons mayonnaise
  • 1/2 teaspoon Dijon mustard
  • Dash of hot sauce
  • Coarse salt and ground pepper, to taste

Directions

  1. Place all ingredients in a bowl; stir to combine.

  2. For a whole-grain sandwich, layer your favorite whole-grain bread with 1/4 cup baby greens (we used arugula) and chicken salad.

  3. To serve on a bed of greens, place 2 cups mixed salad greens on a plate; spoon chicken salad over the top, and add 6 to 8 halved red seedless grapes.

    Classic chicken salad has Frank's Red Hot in it? Call it Martha's chicken salad, but not classic

    Used meat from leftover bone in skin on grilled chicken breast. This simple recipe was absolutely fantastic and took about 10 minutes to make. My new go to recipe! You can also change it up a bit with different herbs or spices, but it is terrific as is. Thanks, Martha!

    I have made this recipe, as written, several times with left over rotisserie chicken and it is delicious.

    I used my Madeleine and sliced half an apple and added a jar of marinated artichokes but tripled the recipe for those added ingredients. My husband loved it!

    My toddlers loved it...need I say more? I did not use onion or celery (onion to save $, celery bc I got lazy), but I did use kosher salt and I added parmesan and mozzarella to taste

    We boiled the chicken in stock and water as recommended -- great touch! And lovely with halved grapes.

    this came out great - just a suggestion boil the chicken in stock it comes out soooo tender and as Martha would say "beautiful"!!
