Watermelon Margaritas

To create salted glasses for these watermelon margaritas, place 1 tablespoon fresh lime juice on a small plate, and 1/2 cup coarse salt on another. Dip rims of four glasses in lime juice, then in the salt to coat.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 3 wide strips orange zest
  • 12 ounces watermelon cubes (about 2 cups)
  • 1/4 cup fresh lime juice
  • 3/4 cup white or silver tequila
  • Lime wedges

Directions

  1. In a small saucepan, bring sugar, water, and orange zest to a boil over high. Reduce to a simmer and cook until sugar dissolves, 3 minutes. Let syrup cool in a bowl. In a blender, puree watermelon cubes until smooth. Strain through a fine-mesh sieve, pressing on solids, into a pitcher (you should have about 1 cup juice). Stir in syrup, lime juice, and tequila. Fill salt-rimmed glasses with ice, then pour margarita mixture over top. Garnish with lime wedges.

    I used this recipe as my starting point, and altered it a bit. Instead of making the orange infused simple syrup, I subbed 4 oz. Gran Marnier, and I didn't strain the watermelon juice, I just put all the ingredients in my Vita Mix and blended it up! Fantastic!

    I loved this drink, but altered the recipe somewhat by combining this with the recipe for watermelon coolers (a non-alcoholic recipe on this site). The only real difference in the watermellon juice is the lack of orange, but I didn't miss it at all! The flavor is fruity with enough tequila to give it a kick, and it's a wonderfully cooling way to enjoy a summer cocktail. I really appreciate the simpleness of only a few ingrediants--it means no flavor gets lost behind any others.

    YUM! This is the perfect summer time cocktail. Surprisingly easy although it takes a little time to make the watermelon juice. But sooo worth it!
