  • 1/4 cup ketchup
  • 3 tablespoons molasses
  • 2 tablespoons packed dark-brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon red-wine vinegar

  • 4 canned chipotle chiles, pureed
  • Juice of 1/2 lemon
  • Coarse salt and freshly ground pepper

Directions

  1. In a medium heavy-bottomed saucepan, heat oil over medium heat. Add onions and garlic, and cook until translucent, 3 to 4 minutes. Add tomatoes, and bring to a boil.

  2. Add the remaining ingredients, and return to a simmer. Cook, stirring occasionally, until thickened, 30 to 35 minutes. Transfer to a food processor, and puree until smooth. Season with salt and pepper. Return to saucepan, and let stand until room temperature.
