Roasted Plum Tomatoes

  • 8 plum tomatoes (about 1 1/2 pounds), halved lengthwise
  • 1 tablespoon olive oil
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground pepper


  1. Preheat oven to 425 degrees. Place tomatoes on a rimmed baking sheet; toss with oil, thyme, salt, and pepper until coated. Arrange in a single layer, cut sides up. Bake until soft, about 30 minutes.

    Possibly the most often used recipe for plum tomatoes in my kitchen. I serve them with roasted garlic over spaghetti and a dollop of pesto. My husband cheers, my often picky kids swoon and we all sit down to a fabulous dinner. I have been known to add fresh basil, toasted pine nuts and grated Parmesan as well. Thanks, Martha. This is the epitome of "Everyday Food".

    Such a simple and easy side dish, but so delicious! I used dried oregano instead of thyme and the tomatoes tasted wonderful.
